Сначала я рекомендую начать делать это ложкой, а когда тесто немного загустеет, продолжаем руками. В итоге у нас должно получиться достаточно крутое тесто, которое необходимо вымешивать в течение 15 минут. После этого убираем его в целлофановый пакет и отправляем в холодильник на 1 час. Через час достаем тесто из холодильника, присыпаем рабочую поверхность мукой, распределяем тесто по поверхности руками. Скалкой раскатываем тесто в пласт толщиной примерно 3-4 мм. Смазываем его растопленным в микроволновой печи сливочным маслом. Сворачиваем лист теста в рулет. Рулет сворачиваем в улитку, убираем в пакет и кладем в холодильник ещё на 1 час. Смешиваем рубленую говядину, лук. Добавляем соль, свежемолотый перец, немного зиры и сладкую паприку. Перемешиваем и даем постоять, пока мы будем заниматься тестом. Вернемся к тесту. Достаем его из холодильника и извлекаем из пакета. Расправляем улитку обратно в рулет. Нарезаем на небольшие куски. Каждый кусок теста раскатываем при помощи скалки. На тесто кладем одну столовую ложку начинки. Приподнимая края теста с трёх сторон, заклеиваем их так, чтобы получился треугольник. Повторяем эту процедуру со всеми кусками теста. Самсу выкладываем на противень швом вниз и смазываем взбитым яйцом. Присыпаем кунжутом. Убираем противень с пирожками в духовку, заранее разогретую до 180 градусов, на 40 минут.
